1 cup strawberries + additional for garnish
1-1/2 cups of unsweetened, plain almond milk
1 teaspoon vanilla extract
2-3 tablespoons honey
½ cup chia seeds
Combine all ingredients except the chia seeds in a blender and process until smooth. Add chia seeds and process briefly on low just until mixed. Divide the mixture among four small serving bowls and chill in the refrigerator at least two hours (or longer). Serve each pudding with a whole strawberry for garnish.
